This fruit and nut bread is a perfect breakfast bread!
1/2 cup warm water
1 tablespoon organic vegetable shortening (can sub butter)
3 tablespoons organic agave (can sub honey)
1 egg
1/2 teaspoon vanilla extract
1 cup whole wheat flour (I used an organic whole wheat flour)
1 1/4 cup bread flour
2 small ripe bananas broken up or sliced
1/2 tsp salt
3/4 cup organic raisins
3/4 cup organic walnuts broken up or diced
1/4 cup organic sunflower seeds (unsalted, not toasted)
1 1/2 tsp dry yeast
- Combine all ingredients in your bread machine according to the instructions provided by your manufacturer. I have, for example, a Panasonic SD-YD250 Automatic Bread Maker with Yeast Dispenser and I put in all dry ingredients first, add wet, and put the yeast in the dispenser
- I set the machine on a basic "raisin" bake, size large, light crust. Please keep in mind this may vary depending on your machine and I recommend checking the bread at the "raisin" stage. The banana can go in with the dry ingredients so it gets worked in completely
- All fruit and nuts, except the banana, should not be added until the raisin stage so they do not get crushed in the kneeding process
- If the bread appears too sticky you may want to add additional flour, 1/4 cup at a time until the desired consistency
